Gandum Village: A Sustainable Boutique Hotel in Alentejo, Portugal

Where Nature, Comfort and Conscious Living Meet in Alentejo

Nestled in the serene hills of Montemor-o-Novo, just one hour from Lisbon, Gandum Village is a new eco-conscious boutique hotel in Alentejo redefining sustainable travel. Blending nature, comfort, and mindful design, this thoughtfully crafted retreat invites guests to slow down, reconnect with nature, and experience intentional living.

Founded by a Swiss–Portuguese couple with backgrounds in climate change research and food waste innovation, Gandum Village is more than just a stay – it’s a purpose-driven experience. Their personal and scientific ethos infuse every detail, creating a space that’s both meaningful and beautifully designed.

Sustainable Architecture and Regenerative Living at Gandum Village

Built in the heart of the Alentejo region of Portugal, Gandum Village is a model for sustainable design and conscious hospitality. Every architectural element has been intentionally planned—from carbon-neutral materials to the revival of taipa (rammed earth), an ancient Portuguese building technique native to the region.

Construction of the eco-friendly boutique hotel began in 2022, using natural, low-impact materials to create thick, striated walls that naturally regulate indoor temperatures—cool in summer, warm in winter—while offering a raw, earthy aesthetic and long-lasting durability. With 18 rooms and 3 houses available, the interior follows a minimalist and biophilic design, with organic textures, muted palettes, and vibrant details from design-led European brands.

Beyond architecture, Gandum Village operates in full harmony with nature. The property is energy self-sufficient, uses sustainable water systems, and enhances local biodiversity through regenerative agroforestry practices. It's not just a stay—it’s a blueprint for eco-conscious travel in Portugal.

Provenance: Seasonal, Locally Sourced Dining at Gandum Village

At Provenance, the on-site restaurant at Gandum Village in Alentejo, sustainability is served on every plate. The menu is rooted in seasonality and conscious sourcing, with a strong focus on vegetarian and vegan dishes, complemented by free-range, ethically raised local produce from trusted farmers and artisans across the region.

Expect vibrant, flavour-forward cooking that evolves with the seasons. In the warmer months, fresh fruits, garden vegetables, and light plant-based plates take the spotlight—like the guest-favourite zucchini gazpacho.

The drinks offering is just as considered, featuring a handpicked selection of natural wines and pét-nats — all perfectly in sync with the food and the unhurried rhythm of the Alentejo countryside.

In the mornings, guests are welcomed with a delicious seasonal buffet featuring homemade almond butter, house-made granola, organic milk, and other nourishing favourites—perfect for slow starts and long breakfasts in nature.
