Encanto by José Avillez is an enchanted plant world where seasonal vegetables take centre stage. Awarded both a Michelin Star and the Michelin Green Star, it's one of Lisbon's most remarkable fine dining experiences.

An Enchanted Plant World in the Heart of Lisbon

Behind the doors of Encanto, José Avillez has created something that feels entirely its own. Described by the chef as an "enchanted plant world", it's a place where vegetables become the stars of an elegant tasting menu, showcasing the very best of Portugal's seasonal harvest with extraordinary creativity.

Located on Largo de São Carlos, the intimate restaurant has earned both a Michelin Star for its exceptional cuisine and the Michelin Green Star, an award reserved for restaurants that lead the way in sustainable gastronomy through thoughtful sourcing, environmental responsibility and a genuine commitment to the future of dining.

Together, the two distinctions place Encanto among Portugal's most exciting culinary destinations. The intimate dining room was designed by Studio Astolfi, warm wooden floors, embroidered upholstered chairs and a library that lines the walls and meets overhead, creating a space as considered as the food it serves.

The Chef

José Avillez is Portugal's most celebrated chef, yet Encanto feels like one of his most personal projects. Inspired by the belief that vegetables deserve the same creativity and precision traditionally reserved for luxury ingredients, he created a restaurant where nature sets the rhythm.

"Encanto is an enchanted place that sprung from wanting to use the best products nature gives us and from a drive to contribute to a more sustainable world," explains José Avillez.

Some ingredients are grown at Casa Nossa, his property in the Alentejo, while carefully selected Portuguese farmers supply the rest.

A Michelin Green Star with Meaning

Encanto follows the seasons rather than a fixed menu, working almost exclusively with locally grown produce sourced from small Portuguese farmers. Around 90% of its fruit and vegetables are local and organic, while approximately 85% of the ingredients come from carefully chosen farm-to-table partners.

This thoughtful philosophy earned Encanto the Michelin Green Star in 2025. Unlike the Michelin Star, which recognises culinary excellence, the Green Star celebrates restaurants that combine outstanding cooking with genuine environmental commitment, rewarding those setting new standards for sustainable gastronomy.

The Menu

Expect around twelve beautifully composed moments celebrating legumes, leaves, mushrooms, flowers, fruits, seeds, algae, eggs and artisan cheeses. Every dish plays with colour, texture and temperature, transforming familiar ingredients into something entirely unexpected.

To accompany the experience, guests can choose from biodynamic wines, craft beers or house-made juices, infusions and kombuchas.

One of Lisbon's Most Memorable Dining Experiences

Encanto received its Michelin Star within its first year of opening. It joined the 50 Best Discovery Collection in 2024 before adding the Michelin Green Star in 2025, recognising both the quality of its cuisine and its commitment to sustainability.

This isn't simply one of the best vegetarian restaurants in Lisbon. It's one of the city's finest restaurants, proving that exceptional fine dining begins with extraordinary ingredients, thoughtful craftsmanship and a deep respect for nature.
