At VIBE Restaurant in Lisbon’s Chiado, Chef Mattia Stanchieri unveils “A Love Letter to Copenhagen,” the fourth chapter in his evolving culinary journey. Inspired by his time at Geranium in Copenhagen—ranked the World’s Best Restaurant in 2022—the new menu captures the essence of Nordic philosophy while celebrating Portuguese ingredients and seasonality.

This chapter marks Stanchieri’s most personal work yet: a minimalist, ingredient-led exploration that honours foraging, fermentation, and local produce. “It’s a cuisine of respect and contemplation,” he explains. “I want the ingredients to tell the story — the flavour should be the protagonist, not the chef.”

The experience unfolds as a journey through land, sea, and season—where autumn vegetables meet Atlantic fish, and citrus, truffle, and herbs bring light and texture. Offered in three tasting formats (7, 9 and 12 courses) the experience captures the essence of nature, craft, and balance that defines Chef Mattia Stanchieri’s cuisine.

True to VIBE’s spirit, the menu is complemented by wine and non-alcoholic pairings — from kombucha and infused teas to refined non-alcoholic wines — alongside a new selection of Nordic-inspired cocktails created with Quattro Teste.

Our favourites from the new menu? The Potatoes de Trás-os-Montes, earthy and comforting; the Jerusalem artichokes, subtle yet deeply layered; and the Razor clams with caviar, a perfect balance of sea and salt.

Tucked away on Rua Horta Seca in Chiado, VIBE is where gastronomy, music, and design come together. The minimalist, Nordic-inspired interiors mirror the purity of the menu: a warm, low-lit space where every element—from the plating to the soundtrack—is designed to immerse guests in rhythm and reflection. VIBE continues to redefine the Lisbon dining scene with each new season, turning every menu into a moment of creative expression.
