In Lisbon’s evolving dining scene, Baz stands out not for excess, but for clarity. Designed by XXXI.studio, Baz is conceived as a physical manifesto of architectural honesty, where materials, process and performance are fully exposed.

Located in Lisbon, the restaurant intentionally dissolves the boundary between kitchen and guest. Here, dining is not separate from making, it unfolds in full view.

A single gesture defines the space

Baz is organised around one dominant element: a 15 metre organic shaped counter that cuts through the interior, dividing service and seating into a balanced 50/50 relationship. Guests and chefs share the same visual field, transforming culinary service into a quiet, continuous performance.

Crafted through a meticulous reinterpretation of the Japanese Shou Sugi Ban technique, the counter was sculpted, burned, brushed and washed by hand. The resulting surface is textured, irregular and deliberately imperfect. It is the soul of the space.

Materials that speak for themselves

From the minimalist stainless steel portal at the entrance to the raw timber and exposed finishes inside, Baz strips architecture back to its essentials. There is no decorative layering, only material integrity. Each element is allowed to age, react and exist honestly within the space.

The dramatically open kitchen goes beyond the trend of visible preparation. Every action is part of the room’s energy, reinforcing the idea that architecture is not just seen, but felt.

Architecture as experience

By overseeing both design and construction, XXXI.studio ensured a rare coherence between concept and execution.

Baz is not designed to impress quickly. It is designed to be experienced slowly, giving us a new kind of restaurant in Lisbon. One where architecture, craft and hospitality merge into a single, transparent experience. A reminder that when materials are trusted and boundaries removed, space becomes presence.
